cloudy day here right in the heart of Illinois. It is 45 degrees and windy out. I have been to Kroger, Food Depot and Schnucks this morning in addition to a couple of other places so I am running behind schedule. All things grind to a stop at 11AM while I stop whatever I am doing to watch The Young and the Restless.
The cherry coffee cake was good. I sent most of it to my daughter’s house.
I also made salmon patties yesterday and fixed creamed peas, I love the salmon patties and I had a cold one for lunch today.

Salmon Patties
•14 to 15 ounce can of red or pink salmon
•1/2 tube of finely crushed Ritz crackers
•1 egg
•1 heaping tablespoon of Miracle Whip
•1/2 tube of finely crushed Ritz crackers
•1 egg
•1 heaping tablespoon of Miracle Whip
Drain and remove bones and the yukky stuff from the salmon. Add the egg, miracle whip and crushed crackers. Mix thoroughly. Pat into 4 or 5 patties. No need to add salt because the crackers are salted. You may add some pepper or Mrs. Dash if you like.
Spray a skillet with cooking spray. Put patties in skillet and spray tops of patties with cooking spray. Cook over medium heat until brown on one side; turn over and brown on the other side.
