I am moving away from salmon and creamed peas. Today I am making chicken and dressing. I have the chicken baking in the oven right now. I will also fix some mashed potatoes and gravy and a veggie of some kind. I am not overly fond of veggies but I force myself to eat them because they are good for you.
And speaking of veggies, Jane asked how I make creamed peas. I have developed a fool proof way to make perfect creamed peas every time. Put one tablespoon of butter in a saucepan, add 2 level tablespoons of flour. Cook on medium heat and stir the flour and butter together like you were going to make a roux or gravy. When the flour and butter have come together pour in the can of peas liquid and all stirring constantly until the peas are thickened and begin to bubble. Remove from heat and add any seasonings that you like. Now this is a veggie that I like!
It is another dreary day here again in the mid 40s. I am really wanting to see the sun as the grey skies are very depressing.
I have read 4 books this week and they were not little tiny ones either. The one that I just finished was Prey by Linda Howard.

This is one of those books that you don’t want to put down for a bathroom run or to fix something to eat. Linda Howard is an excellent writer although the phrases she uses sometimes are a bit salty. I just ignore this and concentrate on the story and she rarely disappoints me.
