Sunshine and…

the snow is melting at a rapid pace.  It is 30 degrees now and to reach 40 today.  I am off to another appointment this morning and then I hope this is it for a few weeks.

My son is having a birthday on April 8th.  He is planning to come home on April 6th.  I am going to order a birthday cake.  My menu will be spiral sliced ham, fried chicken, baked beans and potato salad.  I think I will make a mandarin orange salad to go with that.  What is funny is that he keeps reminding me of the turkey and dressing I fixed a few weeks ago.  I am not sure if I am up to fixing another Thanksgiving dinner.  I think I will stick  with my previously mentioned menu.

Mandarin Orange Salad

•1 small pkg orange Jello
•1 small pkg vanilla pudding (the kind you cook)
•1 small pkg tapioca pudding (the kind you cook)
•3 cups water
•1 large can crushed pineapple (drained)
•1 large can mandarin oranges (drained)
•1 – 12 ounce container cool whip


Place Jello and the two boxes of pudding in a saucepan with the 3 cups of water. Bring to a boil over medium heat until it starts to thicken, stirring constantly to prevent scorching. Remove from heat and cool in fridge. Add fruit to the cooled mixture. Fold in Cool Whip and refrigerate for several hours or overnight.


**I love this stuff.  I have been making it since my children were small.

  10. Happy Easter Beth. It's funny because our daughter's birthday is Friday. We're celebrating by going out to eat. I used to do a birthday dinner for her with her husband's parents, brother, etc., but they've all told me not to. I would have done it this year tho, but the\y said no. Do while you can friend. I love that salad too. I've fixed that many times.

  11. Happy Easter, Beth. Our daughter's birthday is April 5th. She will arrive to this area on Easter for a visit with each of her brothers and with us. Enjpy your son. We have lots of memories don't we? BGB

  15. This recipe sounds delicious! I have been thinking about making dressing-what we call stuffing-even though it isn't traditionally served at Easter. I guess I didn't get my fill at Christmas!
