Too much birthday cake and chocolates??

Time to get caught up with unfinished business.  Like yesterday I started cleaning, did a couple of rooms and was just p**ped out so I quit.  Well, maybe I overdid it a bit on the sweet stuff yesterday.  I bought a birthday cake for my daughter.  She came over yesterday morning and I had a big piece of the cake (Italian cream) with a cup of tea.  The cake was very good although I have to braggingly say that my own homemade Italian cream cake is better.  (Recipe below)  Naturally I sent the rest of the cake home with her.

Cream together:
  • 1 stick butter
  • 1/2 cup oil
  • 2 cups sugar
  • 5 egg yolks
Stir 1 teaspoon soda into 1 cup of buttermilk.  Add 2 cups of flour alternating with the buttermilk mixture.  Add:
  • 1 teaspoon vanilla
  • 1cup shredded coconut
  • 1/2 cup finely chopped walnuts
Beat the 5 egg whites until stiff and fold them into the batter. Pour into 3 greased and floured 8 inch layer pans.  Bake in preheated 325 degree oven for 45 minutes.  Check for doneness with toothpick.
Icing:
Beat one 8 ounce package cream cheese with 1 stick of butter, add 1 teaspoon vanilla, 1 box of powdered sugar, and 1/2 cup chopped nuts.  Continue beating until spreading consistency is reached.  Fill the layers with the icing and around the sides and top.  Garnish with coconut.

And now I have cleaning to finish, stuff like the dreaded bathroom and mopping the kitchen floor.  But first I am going to the nearest drop box to mail a card.  Since the drop box is in the Kroger parking lot I will have to go in the store.  Eye rolling smile  My daughter asked me why I get all of those free Kroger coupons in the mail and she doesn’t get any.  I think it is probably because I am one of their best customers.  Let’s put it this way.  The path from my back door to the Kroger store falls in one of my comfort zones.  You see I have what my daughter calls my comfort routes; how I get from point A to point B without getting on any of the one way streets.  Works fine for me.

Enough procrastinating, which I have stated before is one of my biggest faults.  Now I have to get busy.

  3. I love Kroger's. I go there all of the time. I get the coupons too. :-) Same reason.

    I would love to have been at the table yesterday for a piece of that cake. I will make do here with a cookie! :-)

  4. I know what you mean about comfort zones! Your cake sounds delish! Hope spring will arrive soon for you guys---you've had enough winter for several years already... Enjoy the day and don't worry about procrastinating---as long as stuff gets done eventually. And I'm sure it does! HA!

  7. Cleaning, ugh. Well, I do have to admit that once it's done, it looks so good and I'm so glad; but I have to say, if someone walked in on whatever day and actually had the gall to say, "oh, I see a speck of dust over here...blah blah blah", I think I'd first declare them a non-friend and then murder them on the spot. Bottom line, I agree with Toodie. Nobody will ever say and my grave, "Yes, I knew her for 60 yrs but didn't really know her at all, but wow, she kept a clean house".
    Beth, the new header is really nice, but it's the quote underneath that I LOVE. What a goodie that one is!
    My last tax docs didn't come in the mail today, darn it. Maybe tomorrow.

  8. I know the feeling but I tried very carefully to behave myself on my birthday...I'd say my success was mixed...or is that a nice way to say I failed? I'm off to Chicago on Thursday and the weather is supposed to get a lot colder with snow...sigh...guess I'll stick with Toodie's philosophy!

  9. Did you have a moment of guilt when the thought ran through your mind that this cake could possibly replace German Chocolate cake or be my naxt favorite dessert? Sounds absolutely yummy. Glad that I don`t know your daughter`s address or I may have raided her fridge for a leftover piece.

  14. Much as I love to indulge in my comfort zone Beth, I think your cake would be a step too far, it would be a case of 'Eat it today, wear it to-morrow' and I'm hoping to offload about seven pounds before summer, I think I said that a couple of months ago. probably LOL
