How observant…

are you?  http://blogthings.com/howobservantareyouquiz/  I am not as observant as I thought I was as I couldn’t answer some of the questions on the quiz. 

I was in the kitchen a little while ago putting stuff together for a chicken casserole.  How do I put stuff together for a chicken casserole.  Cooked noodles, cooked chicken cut in small pieces, canned mushrooms, cream of mushroom soup, shredded cheese, canned peas and whatever else strikes my fancy.  When, knock me over with a feather and call me unobservant, I discovered that my electric stove here has a timer on it.  I have been complaining for almost 2 years that my stove here didn’t have a timer on it.  I will probably jump a foot when the timer goes off. 

It is bitterly cold here this morning on the 38th day on the Countdown to Spring.  The snow didn’t amount to much.  The furnace has been running almost constantly.  I imagine the Ameren (lights, gas) bill will be outrageous as that company was just granted a rate hike.  Seems like every company has been granted a rate hike except for the common person.  There, I am ranting and it isn’t even Wednesday.

I am considering making cornbread to go with the casserole.  My brother in law thought that would be a good with it.

I hope you all are enjoying a peaceful day.  I am hoping my SIL will get me a lotto ticket as one of the lotto jackpots has gone over 300 million.

  2. Oh how funny that you had a timer all the while and didn't see it. They probly hid it in the multifunction dial right? Cold here too and our furnace is running to much so I turned it down a bit. Seems every company jumped on the bandwagon to raise rates. You gave me an idea of casserole. I bought a can of chicken and it will be quick making. Thank you! Stay on the sunny side now ;-)

    1. My casserole was really good. I had some left over for the freezer as it freezes really well. I hope yours turned out OK.

    Your casserole sounds good. The weather here is still very cold and the snow lingers on, today has been sunny, but bitter cold. I am now longing for spring.

  6. Dinner sounds great as does the cornbread.I remember as a child eating my Grandmother's Cornbread. I wish I had a good recipe for it. Would you mind sharing yours Beth.

    1. Perfect Homemade Cornbread

      1 c. sifted flour
      1/4 c. sugar
      4 tsp. baking powder
      3/4 tsp. salt
      1 c. yellow cornmeal
      2 eggs, slightly beaten
      1 c. milk
      1/4 c. shortening

      Preheat oven to 425 degrees. Mix first 4 ingredients, add cornmeal and cut in shortening (use your electric mixer). Then add milk and eggs, stirring until all is moistened. Let stand for 5 minutes. Pour into greased 9″x9″ pan. Bake at 425 degrees for 20 minutes or until a toothpick inserted near center comes out clean.

  8. I wasn't feeling well today and took it slow but later took some Ibuprofen and braved the cold for a walk. Sometimes things like that can kick start the system...seems to have worked for me...but that cornbread and casserole would likely do a better job of it! Share?

  9. I make chicken noodle casserole with noodles, mixed frozen veggies, mushroom soup, canned chicken (from Sam's), parmesian cheese, and grated American cheese. We have't had it in a while. It's cold here today, too. Our low tonight is going to be 28. brrrr....we aren't used to that! The leaves on the trees and my flowers that bloomed will die. sad

    I am not observant, either. Once I was in a class where they had someone run in quickly (unexpectedly) and grab someone's purse. Of course, we all were very upset. It was interesting how many different descriptions of the theif there were. We were told to write the description down. We learned that eyewitnesses are not very reliable. I like your song today!

  10. Got a timer..heh heh.. glad you finally found it..can't believe that was not included in some kind of instructions someplace. Well I know how things can get overlooked. Your cornbread recipe is just like mine and it makes great muffins too. We got about 3 inches or so..very cold you bet it is.. I hate to think about the cost of some bills when the weather stays cold for long periods of time. Come ON SPRING!! : )

  11. That's funny, I did the same thing. I was constantly running in to check when one day hubby asked "why don't us use the timer", lol. He then proceeded to show me. Now as to the casserole, sounded great until you lost me at the mushrooms and mushroom soup. Would have to modify for me as I just can't stand those things. Now hubby would like yours.

  12. Cold here too friend. Wow - that test - apparently I walk around with my eyes closed most of the time. Didn't do well at all. I'm with you on the heating bill - it's going to be a big one this month. Just keep thinking - spring is coming.

  15. Corn bread is a natural. It turns out I am pretty observant. How come I didn't notice that? Quite cold here as well. Still no snow though they say we've already had 7 inches this year. I only remember about 2. I'll have another helping please and would you be so kind as to pass the corn bread.
