Rainy Thursday…

It is 36 degrees and pouring down rain.  The rain is not freezing and that is good.

I have been out in the rain to pick up my tax returns.  In Illinois the seniors do not have to pay state income taxes.  I probably shouldn’t have said that.  Our state is the poorest state in the country so I don’t want to give them ideas,  I was pleasantly surprised at the outcome.

I made homemade oatmeal raisin cookies yesterday.  They were really good.

Old Fashioned Oatmeal Raisin Cookies

Small box of raisins
•1 cup of water
•3/4 cup of shortening (may use Crisco or margarine)
•1 cup white sugar
•1/2 cup of brown sugar
•2 eggs
•1 tsp vanilla
•1 TBL maple syrup
•2 & 1/2 cups flour
•1/2 tsp baking powder
•1 tsp soda
•1 tsp salt
•2 cups oatmeal
•1/2 cup chopped nuts (optional)


Preheat oven to 375 degrees. Use ungreased baking sheet. Simmer raisins and water in saucepan over low heat until raisins are plump. Drain raisin liquid into measuring cup. Add enough water to make 1/2 cup.
Mix all dry ingredients together and set aside.


Using mixer mix shortening, eggs, and sugars together. Add maple syrup and vanilla. Add the dry ingredients with the raisin liquid. Fold in the raisins and the nuts.
Drop rounded tablespoons of dough on baking sheet about 2 inches apart. Bake for 8 – 10 minutes until golden brown.  Makes 4 – 5 dozen according to size.  I make big cookies.


If you are a lover of spice you may add 1tsp cinnamon and 1 tsp cloves.  I don’t add these spices.

If I lived close by my Twin in Tennessee I would have fixed some cherry cobbler for her and her son.

    Great cookie recipe! I'm not sure it's a good thing to have cookies in the house, though.

  3. Sis RAIN is soooo much better than shoveling that nasty snow. I am about to go crazy with cabin fever so I think I will escape to the virtual beach and stay awhile.. anything beats shoveling..we are due for a big storm here.. take care and save a cookie for me!! XoXo

  17. Rain would be nice as we get ready to recieve around 2 feet of snow. I am lucky. I got out of work at 4pm today. Work was a zoo as expected. At least this time there's a good excuse for all the buying. The area will be paralized after tomorrow.It still won't be as bad as 1978 because of the previous snow storms we had before the big 2 day storm. Some places had 6 feet of snow on the ground after all was said and done. The coastline was devistated and all the amusement on Revere Beach (America's first public beach)were demolished, though they were on their way out anyway. By the time I went there, my parents took us there time to time in the 60's, the wooden rollercoaster, was about 70 years old and looked very rickity. Still it was like a continuous ciecus 5 miles away. It's all condo's now. I miss it. It was a blast.

  19. Oh yummmm, those cookies sound good. I turned our tax stuff over to the person who will do it for us. Neither D or I are up to completing it anymore. Let someone who knows the rules take care of it. Hope your rain goes away soon.

    That cookie recipe sound awesome...I would use cranberries as we aren't raisin fans and I would add the cinnamon, for sure.

In Texas, we don't pay state income taxes, but they tax us other ways...the state inspection sticker for our car, the license plate sticker for our car, gas tax, taxes on junk food, taxes on practically everything else we buy....except drugs....like cough medicine, etc. And we have the lottery that was supposed to pay for schools, but that was a joke. Our property taxes just keep going up, up, up. Don't you just hate taxes? Enough of my griping.

    Your cookies sound delicous, but I have pledged to try to get some weight off me, so I better not bake them. Maybe after my son's wedding in July. :)

  24. Love a good batch of oatmeal cookies. I'm actually thinking of making sugar cookies and tossing some granola in. Cherry Cobbler sounds lovely, too. Nothing more dreary than a cold rain. I think I'd rather have snow. Wait. Maybe not. One thing is certain, the moisture is necessary. Think cozy thoughts and enjoy your day!
