There is a lot of things I could do this morning but is there really any sense in cleaning when the rain is coming down?? I thought not. Perhaps I will dig around in the freezer and find something good to cook for myself. I know that I have one more rib eye steak in the freezer, Also I think I might be in the mood to bake something.
How does this sound?
Cherry Coffee Cake
- 1 box yellow cake mix
- 1/2 cup canola or vegetable oil
- 1/2 cup water
- 1 tsp. vanilla
- 2 eggs
- 1 can cherry pie filling
- 1/2 cup powdered sugar glaze
- Heat oven to 350 degrees. Lightly spray bottom and sides of 15”X10” (jelly roll) pan.
- In large bowl,stir cake mix, oil, water, vanilla and eggs until batter forms.
- Set aside 3/4 cup batter. Spread remaining batter evenly in pan. Spread pie filling evenly over batter in pan. Drop remaining batter, 1 tablespoonful at a time onto pie filling, spreading slightly.
- Bake about 35 minutes or until toothpick inserted near center of cake comes out clean, Drizzle glaze over warm coffee cake.
Glaze:
2 tbsp. warm milk
1 1/2 c. confectioners' sugar
Blend together thoroughly.

I always like to bake something when I have all of the ingredients on hand. I also use a 13x9 pan for this recipe (extend baking time a few minutes) although I do have a 15x10 pan that I use for Texas Sheet Cake.

Thank you for the explanation of that phrase: put paid to. I have never heard it until now. Yes, cold rain could put paid to most plans. Your indoor plans sound great. Take a photo of that cake! I'd love to see what it looks like. It must be a pretty one!

ReplyDeleteHowever, the same thing is happening here...rain rain...chilly, but over 40. I'm thinking about a stew perhaps..Hobbit Stew (made with roasted root vegetables) or a regular old stew, if there is any beef in the freezer (probably not...we really don't eat that much beef). Thinking of some nice yeast rolls to go with that. And something for dessert. But the farthest I am venturing from this house is the chicken coop. I am tired of being on the run the past few weeks. :)
Well Beth, it's dreary, cold and rainy in Texas too! I know we are ready for THE SUN! I was reading a post from one of my Maine friend's today and they are so very weary of winter..more than usual! The cherry cake sounds divine...I am saving the recipe! Thank you love, for sharing with us!
