Guess what…

it is snowing again and coming down at a pretty good clip.  Expected 1 –2 inches.  My daughter came over this morning and shoveled my car out and then she was gracious enough to take me to the store to pick up a few things.  I am not liking this turn for the worse that winter is taking, making a mockery of my countdown to spring which stands at 66 today.

I decided to cook today and I have a roast with potatoes and carrots in the oven.  It is really starting to smell good.  A very nice change from my regular TV dinner.  I think some of you reading this post would think that I don’t know how to cook.  Not true, I love to cook but it definitely is not fun to cook for one person.

I sent the brownies home this morning with my daughter so that temptation is gone.  Actually I don’t need to lose any weight.  My cardiologist told me that my weight now was perfect for my height.  It is just that when I eat something sweet then I don’t want to eat the stuff that is good for me.

This is just an update.  I am wishing a happy birthday to my Twin’s son Bruce and to my friend Terry’s daughter Danielle.

You all stay safe and be happy!!

Beth

  2. Haven't had any additional snow here so far. It can stay that way as far as I'm concerned. Boy, I have been having trouble on the blogs this morning. This is the first time I've been able to leave a comment without the screen going blank.

  3. Ooh, a perfect time for a roast! Cold weather always reminds me to cook chili or bake something in the oven to warm things up. Enjoy the weekend and stay warm! Lots of good books out there and shows to catch up on!

  4. It will dip into the teens for highs for us over the next couple days next week with a chance for snow...I am done predicting what it will do at this point. It feels nothing like Montana at this point so I guess it will play out as it will...I still say no matter what the countdown must go on! Have a wonderful day my friend!

  5. You are so right - it's hard to cook for 1, and even 2 sometimes unless you are willing to eat lots of left overs. I'm not liking the turn of weather either - we were so spoiled with a mild first half. At least I feel a little better when I visit your blog and see the countdown.

  6. Hi Beth!
Thanks for your comments on my recent post! Life isn't always quite that stressful . . . but it happens.

We've been told to expect our first snow tomorrow, but we rarely get the white stuff, and it even more rarely sticks around, so, we'll see.

I love to watch it coming down, and to walk in it, at first. In 2008 we had so much snow that we needed snow plows and the airport was canceling flights like crazy. That only happens every 30 years or so, though.

I hope your snow lets you get back to life as you like it, soon!

  7. More snow? We have plenty of sunshine here, so our snow (the little bit we had) is melting. It's very windy though, and the wind feels like it's coming straight from the north!

I imagine it wouldn't be fun cooking for one, as most things you cook are enough to feed a family. When you make a meal, you have to eat it for 4 days just to get rid of it!

  8. I agree. Cooking for one is not as fun...and more difficult. I bought some containers and make my own TV dinners. ;)

So nice you got shoveled out. We had another dusting, but that's it. No real snow to speak of yet. We usually have had several snowstorms by now. Sorry you're getting it.

    Have a great weekend! :)

  10. I love the smell of roast cooking....glad you took the time to cook for yourself. My mom stopped cooking 3 years ago when my dad died. Now she just eats one meal a day out. She used to be the world's best cook! We miss her fried chicken and gravy!!!

  12. Love that picture of your daughter. Stay warm and cozy tomorrow. We are wondering if we will be able to go to church tomorrow and small group tomorrow night. We got snow, but temps slightly over 32 let most of it melt. But more is due tonight and temps in the 20's. So tomorrow will be a surprise. Take care. I could almost smell your roast here in Washington. bertieblue

  14. Something else that we have in common, cause we just had some snow as well. Not much, nothing like we have had in the past. Weather sure is strange this year. But hey... when it comes to snow... there's one good thing about snow, it makes your lawn look as nice as your neighbor's!!

  15. ... by the way, if we lived closer, you would never have to worry about cooking for 'one'. I'd let you cook for me, cause that's what friends do and I would let you to make you happy. :o) Bwahahaha!

  16. An oven baked roast, etc. can't be beat. I finally learned how to cook for one. I cook dried beans and today just enough bagged collard greens and a small corn pone. There will be left overs for tomorrow plus cornbread. I seldom freeze anything. It's still cold and sunny.
