Hot and dry Saturday…

It is to be another warm humid day with only a meager hope for some rain.  I  talked with my sis in WV this morning.  They had severe thunderstorms yesterday evening and had some damage to their roof.  They did however get some much needed rain.

This is the kind of weather where I become lethargic.  I don’t have the energy or want to accomplish anything.  Yesterday I did force myself to clean the bathroom.

Affected by lethargy; sluggish and apathetic: "I felt tired and a little lethargic".

sleepy - drowsy – torpid

And another recipe for a hot day.

Layered 24 Hour Lettuce Salad

I love this salad but I hate to make it. Whenever we would have a family get together I would always ask my daughter to bring it.

  • 1/2 head of lettuce, rinsed and patted dry then shredded
  • whole green pepper (seeded and diced)
  • 2 stalks celery (diced)
  • 1 small onion (diced)
  • frozen green peas about 1 cup
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 8 ounce package shredded cheddar cheese
  • 1 cup crumbled cooked bacon (cooked crisp)
  • Seasoned croutons

Use 13X9 glass dish. Put the lettuce in first. Layer the next ingredients in order given. Top with the shredded cheese and the crumbled bacon. Mix the sour cream and mayo and spread over the ingredients in the dish. Top with the seasoned croutons. Cover with plastic wrap and refrigerate overnight.

Keep cool!  Stay safe and be happy!!

  1. Hi Twin . It was 107 yesterday and will be again today. Ugh. Tomorrow and Monday too. Ugh again.

  2. Mmm! I've never made a layered salad before, but maybe I should give it a try!

It's super hot here today too. And am I lethargic too? You bet ;)lol

  3. My favorite place with weather this hot is indoors where it is cool, and that is where I am spending a lot of time.

I love layered salads! I have a similar recipe, but don't make it often at all.

    Stay cool!

  4. I feel that too! lol And I have made that salad too - it is delish. sandie

  5. The only slight break we get from the heat comes from windy evenings but it's still hot. There's a firework ban in place and red flag warnings all par for the course. I don't know what happened to the rain this year.

    1. It's all in England, lol. floods everywhere, but still hosepipe bans.

  6. I am lethargic too - especially if I leave the house. As soon as I step out into the heat, I'm done for! Jackson has his baseball tournament tonight, and I'm not even going to get to go because I can't handle the heat!

I am going to have to make this salad! I had one before that I believe is similar to what you posted, and it was delicious!!

  7. Ahhh, the good ole summertime. Take care and stay cool. BGB

  8. Hello and Good afternoon, Like Anonymous shared the good ole summertime. Give me spring or fall I am a happy girl. Enjoy the rest of your weekend.Anna

  9. Hi Beth,

Sorry you're suffering from the heat. So far we've only had one day that was hot, every other day it was sometimes cool, and frequently rained!

I make that salad also! I make it in a taller bowl, and it's so pretty and so easy!

    Stay cool!

  10. We had a storm come through last night too. So much wind and lightening and we got an inch of needed rain. The heat really doesn't bother me all that much, but then I'm sitting here in AC. : )

  11. Too hot to move days! Stay cool!
Maybe you can talk your daughter into making that salad for no special reason and coming for lunch one day. ;)

  12. Hi Beth,

Sorry it is so uncomfortable for you. Joe wanted to know where the rain is - well its here, a lot of it anyway. lol.

Have a good Sunday. Hugs Nita.

  13. It's 104 right now, no rain in sight. The salad sounds so good, cool and crunchy. Stay cool.

  14. This sounds really good! Hope you get some rain soon!

  15. Stay cool Beth
hope you get some rain soon
    Take care

  16. I get the same way when it's really hot! That salad sounds good!
