It is to be another warm humid day with only a meager hope for some rain. I talked with my sis in WV this morning. They had severe thunderstorms yesterday evening and had some damage to their roof. They did however get some much needed rain.
This is the kind of weather where I become lethargic. I don’t have the energy or want to accomplish anything. Yesterday I did force myself to clean the bathroom.

Layered 24 Hour Lettuce Salad
I love this salad but I hate to make it. Whenever we would have a family get together I would always ask my daughter to bring it.
- 1/2 head of lettuce, rinsed and patted dry then shredded
- whole green pepper (seeded and diced)
- 2 stalks celery (diced)
- 1 small onion (diced)
- frozen green peas about 1 cup
- 1 cup sour cream
- 1/2 cup mayonnaise
- 8 ounce package shredded cheddar cheese
- 1 cup crumbled cooked bacon (cooked crisp)
- Seasoned croutons
Use 13X9 glass dish. Put the lettuce in first. Layer the next ingredients in order given. Top with the shredded cheese and the crumbled bacon. Mix the sour cream and mayo and spread over the ingredients in the dish. Top with the seasoned croutons. Cover with plastic wrap and refrigerate overnight.

ReplyDeleteThe only slight break we get from the heat comes from windy evenings but it's still hot. There's a firework ban in place and red flag warnings all par for the course. I don't know what happened to the rain this year.

DeleteI am lethargic too - especially if I leave the house. As soon as I step out into the heat, I'm done for! Jackson has his baseball tournament tonight, and I'm not even going to get to go because I can't handle the heat!

I make that salad also! I make it in a taller bowl, and it's so pretty and so easy!

We had a storm come through last night too. So much wind and lightening and we got an inch of needed rain. The heat really doesn't bother me all that much, but then I'm sitting here in AC. : )
