Winter is back…

and there is snow on the ground again, not a lot but it is still snowing.   What happened to the beautiful weather that we had for the last 3 days?  It is only 7 more days till spring so this weather has to end sometime.  I am not holding my breath though.

Yesterday was a busy morning.  I had a hair appointment then  a trip to the post office, then stopped by Food Depot for a few items (including a lotto ticket for Mega Millions which is over $300 million right now) then a bite to eat then home.

I am sitting here drinking a Carnation Instant Breakfast while I am typing this.  Did you know that stuff comes in bottles now like Boost and Ensure?  Not too bad.  I keep some Boost on hand for when I want a quick breakfast or supper. 

Monday while at Costco I got a rotisserie chicken.  They cost $4.99 and the chicken is a fairly good size.  I took the meat from the bones and used the carcass to make homemade chicken vegetable soup. Cook carcass in boiling water for a few minutes.  Remove rest of meat and strain broth,  I then refrigerated it overnight so I was able to remove the fat from it yesterday morning.  I diced one large carrot, 2 diced stalks of celery, 1 large potato diced , some frozen peas and a diced onion.  Bring to a boil and simmer for about one hour.  Add seasonings and more chicken if desired.  If you don’t have enough broth add a can of Swanson chicken broth.  I really enjoyed the soup.  I don’t eat nearly enough veggies and this really seemed to satisfy me.

And now what am I going to do with the rest of the day?  It is too messy to go anywhere and I would have to clean my car off again.  That alone puts me out of the mood to do anything.

  1. Sounds like you have the right idea with the chicken soup! You could make some little chicken-type turnovers and freeze them for later! Too bad about the snow---but think how wonderful spring will be when it finally gets there!

  2. I love homemade chicken soup! Reading is a good escape from the dreariness of a shut in day, and we all know it won't last. Spring will be here VERY soon - have hope!

  5. Our latest cool down didn't do nearly as much as predicted...fifties all week now...dare I hope for a little spring soon? I've been indulging in "Game of Thrones" and mightily enjoying the reading of it. Nothing like a good book to console when the weather isn't very nice.

  6. Beth, I know you are as tired of snow and shoveling as I am. I am so glad that I took the time to walk the driveways and sit on my porch yesterday after that trip to the dentist. I knew I wanted to enjoy that great air and sunshine. Today is a bummer. LOL Hopefully this will be our last snow. I bet Alaska never had this much snow...well maybe.   12. Willy Dunne Wooters is so funny. He won't eat any mixed vegetables, even if they're in soup. Plus, he won't eat cooked carrots in any form. When we get chicken noodle soup at Panera, he spoons out all the carrots and puts them in my bowl. Maybe this snow is the last.

  13. Mother Nature sure is confused! Last two years we had horrid Winters here in the Netherlands, lots of snow still in March. And this year we didn't have a Winter at all. Autumn went into Spring straight away. I'm confused anyway :-) So, I'm sending you hugs and lots of sunshine. Hope Spring will arrive soon at your place.

  16. We went to the grocery this a.m. and I had my hair cut this aft. Glad to have that over with!!! John is not a big soup eater, but I sure love it. Your chicken with veggies sounds so good to me. Hope you have a good evening.

  19. It's cold and rainy here. Well, at least it's not snow...yet. I don't put it passed Mother Nature to suprise us! That chicken soup sounds good right about now.

  26. I have same feeling. So I decided to go look at other bloggers pages where they have sunsets up, birds. I put up a blog today at my place. Oh the lake with snow and ice and then the other pictures I want to look like.

    Hubby is watching soccer. I am off to go do my second scrapbook for me.

    Finished my first scrapbook for my self. That soup sounds good. I like that chicken too.

    Ahhhhh I feel better now since I have looked at 10 bloggers and made comments..
