Sunday and a….

coconut cream pie.  Yes, I have been busy the last couple of days and I have decided to reward myself with a homemade coconut cream pie.  I will have to show a picture of my pie tomorrow.

My Coconut Cream Pie
•3/4 cup white sugar
•1/3 cup all purpose flour
•1/4 teaspoon salt
•2 cups milk
•4 egg yolks (beaten) Save the egg whites for the meringue
•2 TBLs butter
•1 &1/4 teaspoons vanilla extract
•1 9 inch pie crust, baked
•1 cup toasted coconut (toast in 400 degree oven about 5 minutes or less, watch carefully.)

In a saucepan, combine the sugar, flour and the salt. Add the beaten egg yolks to the 2 cups of milk mixing thoroughly. Pour into dry ingredients mixing thoroughly. Turn on medium heat and cook, stirring constantly until mixture thickens and starts to bubble. Be careful not to scorch. Turn off heat. Add butter and vanilla and 1/2 cup of the toasted coconut and mix  thoroughly.  Pour the cooled filling into the pie shell . Have your oven preheated to 350 degrees.

Fix the meringue. Whip the egg whites on high until they begin to peak. Add 1/3 cup sugar to the egg whites and continue beating until stiff peaks form. Spread the meringue evenly over the filling.  Sprinkle the remaining toasted coconut on top of the meringue   Bake at 350 degrees for 15 minutes until the meringue is golden brown.

I hand washed the car as best I could and it does look a lot better.  I could have gone to one of the car wash places but I was too lazy, besides it was wonderful being outside in  the warm sunshine.  I also cleaned and dusted the furniture and tackled the bathroom.  After all of this I went outdoors and picked up the pieces of glass that have been in the grassy area since the tornado.  The glass has been mentioned several times to the office with no response so I did what I would do if I still lived in my own home; I cleaned it up. 

I have also finished a couple of books one by Linda Lael Miller (one of my favorite authors) titled Yankee Wife.  This is a book from 1993 that I had on my book shelf for several years and I just now got around to reading it.

  3. Hi Beth,I am doing some reading and trying to catch up with friends before I head to the nursing home. He is a wee bit better, but still sounds terrible when he coughs. We had 80 degrees yesterday and then the storm came through last night. We had storm warnings until 2AM. I love your stopping by. Your pie sounds yummy and you like the same authors as I do.   6. I am writing your recipe down! I am making coconut cream pies for Easter. Your recipe sounds better than the one I have! I can't believe nobody picked the glass up. What would happen when mowing season starts?

  7. Oh- My almost very favorite pie- edged out slightly by Key Lime. lol I am saving this recipe. I have never toasted the coconut before though.
    Glad you got your glass cleaned up but sorry you had to do it..and you got your car washed and some cleaning done. Wow!

  10. Beth, Washed your car, way to go. I am so lazy, I usually let God wash my car in the rain.LOL He knows it true so it's okay. Coconut cream pie, that was my all time favorite pie that my MIL made. She would make that Crisco pie crust. She was the best cook ever...now two of my daughters are pretty good...they got it my MIL( grandma Francis.) not from me. LOL.
