Sunny and…

31 degrees this morning to reach 46 today.  The furnace is running again and the flannel sheets are still on the bed.  The snow didn’t amount to anything here but the roads were icy overnight.  It will get better I know.

Yesterday was so busy that I am wondering what to do with myself this morning.  I have cleaned out the 2 big closets.  I am now considering cleaning out dresser drawers to see how my shorts/capris, etc. stack up for warmer weather.  I forget from one season to the next what I have in summer clothing.  I had no summer last year as I was in the hospital and then recuperating for the rest of the summer.  I am praying that is all behind me.

The pie is nothing but a distant memory.  It was really good.  I think if you try the recipe you will really like the filling.  My son reads my blog and called and asked me when I was going to make a lemon meringue pie.  I love anything with a lemon flavor as does my son.  Lemon meringue is my favorite pie but it a bit time consuming to make.  I probably will make one the next time he comes home.  For the recipe I use the one from my old Betty Crocker cookbook that I got as a wedding present.

  2. Beth, My sister Jeanie got one of those Betty Crocker cook books when she got married and I know she has tried many of the recipes and all were very good. I could just see your son thinking...mmmm now to get mom to make me a lemon pie. LOL. Too sweet. Hope it does warm up for all of us....can you believe how much snow people are still getting...gaaa.   7. Yum!!! I love pie....especially pecan. I'm glad it's warming up. I know that it makes people happy....especially when we see plants spring up and of course.....the sun!

  9. I just love reading your posts Beth! Texas actually had a freeze last night so I covered my new blooming Azaleas...back in the high 60's today! That is to be expected at this time of year! Organizing summer clothing sounds like a good plan!!! Have a wonderful day!

  11. We're at 56 degrees here...no complaints except it's once again cloudy. I'm exhausted after watching last night's blood moon. I particularly love citrus...it seems to speak of warmer weather.

  12. 34° as I write. We had terrible heavy rains all morning and there were whitecaps on our lake and a minor washout across the side lawn.The daffs are about to bloom. GO AWAY winter! Guess I missed out on your pie. I will have to make one for us now (lemon meringue).

  13. I don't like the sound of icy roads! We have a freeze warning here for overnight. We still have the blanket on the bed, and we had never switched the thermostat to the a/c, so I'm counting on it to keep us warm. xo Nellie

    Lemon Meringue Pie is my favorite too. I've never been able to get the meringue quite right though. Wish I could stop in and share a piece with you when you make it. : )

  16. I love lemon too but I'm not a pie maker so I've never tackled a lemon meringue. I remember copying down your lemon bars recipe but for the life of me I can't remember where I put it! So glad you mentioned it again so I can look for it and make it soon.

    I'm keeping my fingers crossed for you that the winter is finally over. We are under a frost warning here tonight in East Texas and for the second night in a row I've covered up my tomato plants. They usually have blossoms on them by this time!

  17. I HAVE that old Betty Crocker book! Stained, dog-eared, old mess of a book and it's been with me since about 1963, maybe even a little earlier. All those old cookbooks were so great --- and loadedddddddd with lard! That's what made everything taste so darn good, yummmm.

    I was going to wish you a good sunny morning, but my eyes haven't focused all day and I stayed away from the pc....because I sat here ALL night and into the morning watching a darn live cam no less of the red moon. It was so darn cloudy here that you couldn't see a thing. By the time 6:30am rolled around, I wondered what on earth I was doing. Sheesh, the best laid plans, right?

  18. Ah, I got a Betty Crocker cookbook for a wedding present too. I still have it, faded and well used. Jim and I love lemon pie too, but I don't try to make it anymore. I went through the kitchen and closet today too looking for the things I could give for tomorrow's collection for the blind. hope you get good warm weather soon so you can put winter behind you.   24. Hi Beth, sorry to hear you had some snow again, but fortunately it didn't last for you. and here's hoping for a lovely summer this year to make for the lost one last year. I like Lemon drizzle cake, not nearly so time consuming as lemon meringue, but nice in a different way. I too, like Alexis above, still have on my leccie blanket, just for the first half hour, bliss. keep well and keep blogging. love Arlene, Zak and Ruby.
